To increase complexity and show a little more nuance, I charged lower and used less heat through middle, then dropping hot and fast near the end to preserve acidity. The end result is a beautifully complex and layered cup that still has a really loud up front acidity. End result is a predominantly floral experience with hibiscus, rose, chamomile, and jasmine that cools into plum and pomegranate. As specialty coffee as a whole grows and changes, it's a beautiful thing to see the same names pop up year over year on the menus of roasters who we respect and admire. Greater than the sum of its parts, this coffee represents the inherently collaborative nature of coffee production and export, and the many steps it takes for it to get to our doorsteps. Tesfaye employs 4 full time, year round employees and 72+ seasonal workers. In the cup, we are hit like a bolt of lightning with an electric lemon-lime acidity, followed by a lively sparkling blackberry soda note. The local Murago outgrowers deliver cherry to this drying station where it's then floated and dried on raised beds for 20 days, while being meticulously monitored.
