Arnulfo Caro began planting Chiroso seedlings in 2020. with his first full harvest in 2022. You may recognize the last name as his nephew, Santiago Caro, is also well known and lauded for his quality focused approach to growing and processing. Arnulfo's farm, Hoyo Rico, sits at 2,100masl in Anza, a small town near the Cauca river in the Antioquia region of Colombia. The love and care shown here are immediately noticeable upon roasting and cupping. This extraordinarily clean washed Chiroso took us by surprise when we read through the processing specs. With 3-4 days held in cherry in tanks, and an additional 8 day underwater fermentation happening after depulping, it would be easy to assume this coffee would have some form of process-y funk or tropical fruit tone to it, but instead, it offers a very delicately aromatic, floral, and crispy citric acidity profile that has cleared most Colombian coffees in recent memory for us.
Cup Notes: Straight away when ground, the dry aroma is intensely lemongrass and citrus forward. In the cup, that same lemongrass note is loud and up front, eventually giving way to stonefruit and complex citrus flavors like peach and kumquat as the cup cools.
