Just a little further up from Fray's farm in Pabón, at 2,100masl, sits a second generation coffee farm managed by Pablo Montoya. Despite being one of 6 siblings, when his father passed away, Pablo was the only one willing to stay and carry on the family tradition of coffee farming. Now 61 years old with children of his own, Pablo has remained dedicated to coffee throughout his life, and has expanded his farmland by buying 2 additional neighboring parcels. His daughter now owns a seperate farm as well that Pablo helps manage, while his son stays at his main farm to assist with pruning, picking and processing. For the past few years, Pablo has gained a renewed interest in elevating his quality and processing standards with a great deal of focus on Chiroso. This year's harvest really exemplifies what we love about Chiroso, offering a delightfully clean and green tea/botanical forward cup. While hot, we find grassy notes of matcha or fresh green tea, with a nice citric kick in the center that reminds us of kumquat or blood orange. As it cools, a really lovely herbal tea tones begins to come through, reminding us of nettle and lemonbalm.
