Process: Double Washed: In-cherry fermentation for 24-30 hours, depulped and washed with some mucilage remaining, fermented underwater for another 36-40 hours. Washed thoroughly and then dried on raised beds for 18-22 days.

Though perfection is never attainable, the process of constant iteration and small improvements upon a system will eventually lead to something close to it. The progression of Mario's Mejorado nursery and breeding program is a great example of this. Every single tree on the 25 hectare farm has been meticulously cultivated and selected, each unique phenotype adapted specifically to his farm, Finca Meridiano's specific micro-climate. This guided and careful hand in the specialization of Mario's coffee trees has led to a great deal of stability in quality, year over year offering an extremely good product despite the effects of climate change and unstable weather patterns presenting many difficulties. This coffee comes to us as the result of a cancelled contract, a buyer had backed out at the last second and suddenly Finca Meridiano had some extra inventory. After being introduced to Mario Hervas through Alex Wallace, the head roaster at Scenery in the UK, we purchased 80kg of this Mejorado completely blind, going on the word of mouth alone. That trust proved warranted upon brewing the very first test roast of this coffee, wherein we found beautifully layered sweetness and floraity, and a spike of intense acidity that carries through to the final sip.

While hot, we find an array of different stonefruits like peach and apricot, with a strong cantaloupe melon note punching through the center. As the cup cools, a vividly clean sugarcane juice note comes through alongside a beautiful bouquet of florals and botanicals. A crisp mint-like herbality combines with delicate florality that reminds us of Marigold tea with honey.
