Process: Washed: Picked during a single day over, sorted with a custom protocol to remove defects, depulped and washed for 48 hours
Tasting notes: Plum, Pomegranate, Rose
Roaster Notes: This coffee has a slightly lower density than you'd expect from Ethiopia, so I approached it with a medium-high charge, still trying to go relatively quickly through the drying phase without scorching. I kicked up air pretty early as I observed color change, and kept steady heat on it until the middle of the roast, kicking down the gas at the last second to let it ride into FC with quite a lot of energy. Very short development time on this one, higher end temperature in comparison. This leads to an explosive amount of aromatics and plenty of acidity to complement this coffees deliciously sweet dark red fruit tones. End result is a predominantly floral experience with hibiscus, rose, chamomile, and jasmine that cools into plum and pomegranate. Delicate body with an oolong finish that lingers.
