Process: Washed: Hand picked, sorted, floated to remove defects, then washed in open concrete tanks for 40-48 hours. Drying takes place on raised beds for 12-15 days. 

Tasting notes: Yellow Fig, Apricot, Elderflower 

Roaster Notes: I started this roast by maxing out the charge energy to the highest temp and gas I knew I could get away with, then keeping that heat in as long as possible before cutting gas very aggressively towards the end to coast into crack with a considerable amount of energy. Very little development time on this one to preserve florals. End result is a bright and loud yellow fruit profile with layered florals of jasmine and elderflower.
