This lot comes from Sookoo Coffee, owned and operated by Ture Waji. Founded in 2018, Sookoo Coffee originally processed all its coffee at a drying station in Suke Quto, but has now grown to include 3 stations in total, adding on Sawana in Shakiso and Wessi station in the village of Tima. This naturally processed lot, titled "Shoondhisa" comes from 35 smallholder farmers surrounding Sookoo's drying station in Suke. On average, each farmer tends to roughly 300 coffee trees, dispersed throughout forested farm lands. All of this hardwork resulted in a beautifully clean, dynamic and interesting cup profile with a well structured candied peach and pineapple vibe while hot. As it cools, orange zest, subtle warming spices like clove or cardamom, and a lovely white tea body all coalesce into a quintessential "clean nat" flavor profile.
