Marysabel Caballero and Moises Herrera have been well known in the coffee industry for over 20 years at this point, and for good reason. Typically, most coffee farms operate with one centralized location, however in the case of Finca El Puente, Marysabel and Moises manage 36 different plots of land spanning across 4 different regions of Honduras. With over 56 different varietals of coffee growing throughout 50 farms in Chinacla, San Jose, Marcala, and Santa Ana, there is an extreme amount of diversity on offer. Through it all, the 2 are dedicated to continual pursuit of knowledge and high quality coffee cultivation. We take a great deal of inspiration from the huge names in specialty that came before us, and have enjoyed these coffees from a few different roasters in the past. As specialty coffee as a whole grows and changes, it's a beautiful thing to see the same names pop up year over year on the menus of roasters who we respect and admire. We took a different approach here in order to really honor that, still within the bounds of an "ultralight," but leaning more towards a Nordic style with intentional sweetness and comfort.
Cup Notes: Sipping this while hot gives those warm fuzzies immediately. Specialty chocolate, cocoa nibs, like eating the garnish on a chocolate croissant at a good bakery. This is still Shoebox though, so as the cup cools, expect a lovely floral jasmine tone and fresh, ripe Pluots(plum+apricot hybrid.)
