The Caballero family name is known all throughout the coffee world, having graced many roasters' menus over the years, consistently inspiring us to learn more about brewing and roasting. Last year, we released a lovely washed SL-28 from the Caballero family and when we heard Fabio Jr. and his grandfather, Fabio "Don" Caballero, were going to be at a cupping hosted by Cima Cafe, we jumped at the chance to share some of that coffee with them. This year, we are incredibly grateful for the opportunity to share this beautiful washed Gesha from Fabio's own 2025 CoE winning farm, "La Salvaje." which translates to "The Wild" in Spanish. True to its name, La Salvaje is a sprawling forest rich in biodiversity with plenty of native shade trees. At 1,870masl, it is the highest grown coffee we've tasted from Honduras, and that quality is driven even further by the immaculate processing here. After being picked at peak ripeness, cherries were immediately depulped and bulk dry fermented for 48 hours. After this, the cherries were fully washed before being slow dried on raised and shaded beds for 25-30 days. In the cup, we find an extremely punchy Meyer lemon acidity off the jump, with bright berry tones following quickly behind. As it cools, an incredibly dynamic range of complex floral character begins to show, with apple blossom, lemon verbena, jasmine and bergamot all vying for your attention. In the final sips, the individual pieces coalesce into balance with Acai, bergamot, jasmine, and Meyer lemon being most prominent. Heavy floral linger in the finish, absolute banger, and possibly the best coffee we've released all year.
