BC3.5 Drum - This is the very first Peruvian Gesha I've roasted, and the general approach of hot and fast worked pretty well on the first try. On the production profile, I spent a little more time in dry and slowed down just a tiny bit through middle for some added complexity. Hugely acidity focused, bringing bright lychee right up front, a buttercream-esq body, and chamomile tea with honey as it cools.
