Over the last couple months, we've been playing around with the idea of blending for quality. Throughout the coffee industry, it is common practice to blend lots together for utilitarian and financial purposes. If a coffee is faded and losing flavor fast, throwing it in as a 5-33% component and hoping your customers don't notice happens all the time. It can often cover roast and green defects, and help to ensure no coffees in your inventory go to waste. In enthusiast circles that are aware of this, the "House Blend" has become synonymous with poor quality. When we first began thinking of blend ideas, I knew this would not at all be an option we'd entertain. In an industry so focused on elevating traceable single origin coffees, we believe that if you're gonna make a blend, those coffees should work in tandem to elevate and uplift the final cup, not hide inventory management mistakes. As a result, we chose 2 of our favorite washed coffees on the menu after rigorous testing: Yenifer Rojas's Pink Bourbon and the Uraga Outgrowers community lot from Tesfaye Coffee. Our 2 favorite origins, with some of the highest quality potential possible, combining for a cup that is greater than the sum of its parts. 
This first blend, Shoéy #1, focuses mainly on floral intensity and clarity. With intense bergamot and jasmine notes up front, the cup begins to cool into subtle and soft apple blossom tones, before waking right back up again into a bangin lemon-lime acidity with a delicate rose jam sweetness throughout.
